Grannie Lou's Avocado Salad Dressing

Ingredients

-1 CRUSHED AVOCADO
-1/2 CUP OLIVE OIL
-1/3 CUP FRESH SQUEEZED LEMON JUICE
-3 OR 4 DICED GREEN ONIONS
-FRESH CILANTRO CHOPPED FINE (TO TASTE. I USE ABOUT 2 TBL WHEN CHOPPED)
-FRESHLY CRUSHED GARLIC TO TASTE (I USE 1 MED TO LARGE CLOVE, HOWEVER THE RECIPE CALLS FOR 2 & THAT KNOCKS MY SOCKS OFF)
-SALT & FRESH GROUND PEPPER
(SALT IS THE HARDEST THING TO GET RIGHT. GO EASY AND THEN TASTE IT AS YOU GO WITH A LETTUCE LEAF DIPPED IN SO YOU APPROXIMATE THE SEASONING ONCE IT IS TOSSED. ALWAYS TASTE BEFORE YOU SERVE. AVOCADOS NEED A FAIR AMOUNT OF SALT, BUT FRIENDS WHO'VE MADE THIS RECIPE OFTEN PUT IN TOO MUCH SALT)

Instructions

Mix all together and refrigerate 30 minutes before tossing & serving... I grate fresh parmigiano/reggiano on top.
Serves 6-12 people depending on portion size.
