Vegan Health Food Muffins

Ingredients

These muffins make a great post-workout and recovery treat. They are full of vitamins, complex carbohydrates and protein. They are virtually fat free too. They are great with peanutbutter and kids really like them! Enjoy! :)

Ingredients:

1 & 1/2 cup whole wheat flour
2 tsp. baking powder
1 cup steel-cut non-processed oats
1/2 cup raisins
1/2 cup dried cranberries
1/4 cup coconut
1/4 cup raw slivered almonds
1/4 cup sucanat OR 1/4 cup brown sugar
1 tsp. salt
1/3 cup unsweetened applesauce
1 cup vanilla soy milk
1 tsp. vanilla
1/3 cup molasses

Instructions

Mix together dry ingredients.

Blend applesauce, soy milk, vanilla and molasses in separate bowl.

Pour wet mixture over dry ingredients and stir only to moisten. Assure not to over-mix to avoid "chewy" muffins. :)

Spoon into well-greased muffin cups, sprinkling oats and raisins on the tops.

Bake 375 degrees for 15-20 minutes.

Yields - 10 large muffins.
